It’s Friday, which means it’s time for me to list out my favorite things from this week AKA the things I have been obsessing over.
A friend instagramed a picture of a tweet (I know, so confusing) by the CommonWhiteGrls account, which had me laughing all week. Maybe it’s not as funny as I think it is, but the reality is that I tell people I’m going to “die” or that I’m “dying” because “I can’t” all the time. Oh modern language, so dramatic. Make sure to follow CommonWhiteGrls on Twitter for your daily giggle; they’re pretty hilarious.
MUSIC: Aly & AJ “Chemicals React”
This is a relatively old song, but every time I hear it, I want to listen over and over. Aly & AJ are sisters who grew up on the Disney Channel, who have a poppy sound. You may remember their one hit, “Potential Breakup Song,” but this is the song that should have been on the radio so they could have had a longer run in the music industry. Enjoy!
Maybe it’s because I went to Marist where our logo is a Red Fox, or the fact that they’re actually beautiful animals (minus their attitudes), but I am loving FOX PRINT. I purchased a sweater with a sleeping fox from Old Navy (see image below. I was going to take a picture of myself in it, but I got lazy.), and not only is it super comfortable, but I love the fox.
With that said, I have been researching other fox print items, and these are the best ones I have come across:
- Aqua Fox Mittens
- French Connection Fox Knit Sweater
- Old Navy Fox Sweater
- Ann Taylor Kissing Foxes Sweater
KEY & PEELES
Recently, my close friend has been sending me video after video from the Comedy Central sketch-comedy, Key & Peeles. It’s absolutely ridiculous, but I still find myself cracking up. In my opinion, this is the BEST skit I have seen from this show. It’s so out there and crude, but I love it. New episodes air Wednesdays at 10:30 PM EST on Comedy Central.
RECIPE: Spinach Bread
My goal for the past month or so is to not eat bread and eat more vegetables. So, when I started this task, I had not realized how badly I wanted to eat a sandwich. I found a recipe for spinach bread, and I have made it my own. Technically, it’s a souffle, but it’s so delicious and convenient. I mass-produce then freeze so I always have some at home. It’s very simple:
- Preheat oven to 400-degrees.
- Mix the following ingredients in a large bowl:
- 1 10 oz package of frozen spinach, thawed and made as dry as possible
- 4 eggs
- ¼ cup parmesan cheese
- 1 tbsp. garlic powder
- Salt and pepper for flavor
- Pour mixture into a 10”x10” pan and bake for 15 to 20 minutes.
Like I said: super easy! Then I let it cool on wax paper, then cut up into sandwich sized pieces.
Another thing I love about this recipe is the flexibility. I will take the recipe and lay the mixture flat on a baking sheet and use the spinach bread to make pizza crust. It adds a lot of flavor, and it is fun to work with.
Also, this beaut of a concoction can be made. Take some fresh mozzarella and prosciutto and melt on top of the spinach bread for 15 minutes in the oven at 350-degrees, and you get this!:
Let me know if you have any other ideas for how to use spinach bread. I am up for any and all suggestions.
